My World Famous Granola Recipe
History: This recipe has evolved into what it is after 22 years of learning about what is good for you and what I like. The original had a 1 cup of oil in it. I finally figured out that I didn't need that oil, and it didn't have any bearing on the taste. I now use about a tablespoon in the bottom of the measuring cup. The only purpose that serves is to make the honey come out of the measuring cup easier. Everyone loves this, and it has been sent to Iraq many times to home sick soldiers.
Ingredients:
Spray a cookie sheet with nonstick coating. You can combine all the ingredients in the cookie sheet or in a separate bowl. Mix well and spread evenly on the cookies sheet.
Cook about 30 mins in a 250 degree oven. Stir a couple of times during the baking. Be careful because it burns easily. (I usually make this after I've baked something else and shut off the oven. The oven is cooling down and cooking the cereal. I just make sure to stir it more because the oven is at a higher temperature when you start.)
Cool about 10 mins and then store in an airtight container. (don't let this get to cool or you won't get it out of the pan)
You can add raisins or any kind of dried fruit after it has cooled.

- 6 cups of oatmeal (I like old fashioned)
- 1 cup coconut
- 1 cup chopped nuts (I like pecans, but almonds are very good too)
- 1 tablespoon oil (place in measuring cup before you measure the honeyl)
- 1 cup honey with a teaspoon of vanilla mixed into it
- 1-2 teaspoons of cinnamon (adjust this to your taste. . . I use more than this)
