Apricot Balls
History:
This recipe is made every Christmas by your Grandmother Clara. They're also made for family weddings or funerals.
Ingredients:
- 1 pound finely chopped or ground dried apricots
- 2 cups shredded coconut
- 1 can sweetened condensed milk
- 1/4 cup finely chopped nuts (I like pecans)
- Confectioners sugar to coat balls
Directions:
- Mix apricots and coconut.
- Add sweetened condensed milk and blend well.
- Shape into balls and roll in powder sugar.
- Let stand until firm in refrigerator.
Key to this recipe is to make sure the mixture is chilled before you try shape.
