Pumpkin Bars

Pumpkin Bars
Ingredients:
  • 2 cups all purpose flour (I use unbleached)
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 4 eggs
  • 16 ounce can pumpkin
  • 1 2/3 cups sugar
  • 1 cup cooking oil ( I use I cup of applesauce instead of the oil to cut the fat)
  • 1 cup chopped pecans
Directions:
  1. Combine flour, baking powder, cinnamon, soda, and 1 teaspoon salt. Set aside.
  2. In a mixer bowl beat together eggs, pumpkin, sugar, and oil or applesauce.
  3. Add flour mixture, and beat well.
  4. Stir in pecans. (I usually make it without because many of my friends have nut allergies)
  5. Spread in ungreased 14 x 10 x 1 inch baking pan.
  6. Bake at 350 for 25 - 30 minutes or until toothpick inserted in center comes out clean.
  7. Cool on wire rack.
  8. Frost with cream cheese frosting.
Ingredients for Cream Cheese Frosting:
  • 3 ounces cream cheese
  • 1/4 cup butter or margarine
  • 1 teaspoon vanilla
  • 2 cups powder sugar
Directions:
  1. In a bowl beat together cream cheese, butter, and vanilla until fluffy.
  2. Gradually add powder sugar mix until smooth.
  3. Frost cake.
  4. Sprinkle chopped pecans over top. (I rarely do this, but it looks nice)
