Pumpkin Bars
Ingredients:
- 2 cups all purpose flour (I use unbleached)
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 4 eggs
- 16 ounce can pumpkin
- 1 2/3 cups sugar
- 1 cup cooking oil ( I use I cup of applesauce instead of the oil to cut the fat)
- 1 cup chopped pecans
- Combine flour, baking powder, cinnamon, soda, and 1 teaspoon salt. Set aside.
- In a mixer bowl beat together eggs, pumpkin, sugar, and oil or applesauce.
- Add flour mixture, and beat well.
- Stir in pecans. (I usually make it without because many of my friends have nut allergies)
- Spread in ungreased 14 x 10 x 1 inch baking pan.
- Bake at 350 for 25 - 30 minutes or until toothpick inserted in center comes out clean.
- Cool on wire rack.
- Frost with cream cheese frosting.
- 3 ounces cream cheese
- 1/4 cup butter or margarine
- 1 teaspoon vanilla
- 2 cups powder sugar
- In a bowl beat together cream cheese, butter, and vanilla until fluffy.
- Gradually add powder sugar mix until smooth.
- Frost cake.
- Sprinkle chopped pecans over top. (I rarely do this, but it looks nice)
