Grandma Pearl's Meatballs

Grandma Pearl’s Meatballs
History: My maternal grandmother did not know the definition of minced. She made meatballs with chunks of onion and garlic. As a child I would pick them out because I did not like the chunks. Sometimes grandma would also take some raw sausage out of the casing and mix it up with the hamburger. That gave her meatballs a little extra taste.


Ingredients:½ cup minced onion
½ cup Progresso Bread Crumbs
½ cup crushed white crackers
2 cloves minced fresh garlic
2 lbs ground beef (I use lean beef)
½ teaspoon pepper
1 egg
1 teaspoon salt
¾ to 1 cup Romano cheese (you can use parmesan)
Directions:Mix all ingredients with your hands until well blended.
In a large skillet with about 1/2 cup olive oil over medium high heat brown and cook through on all sides. When all the way cooked, add them to your sauce and let them cook slowly for about 1 hour.
