Mamma’s Meatball Recipe
History: This recipe has really never been written down. Every Italian woman adds their special touch to the recipe. This recipe is my best recollection of making meatballs with my mother.
Ingredients:
- 2 lbs ground beef (I use lean beef)
- ½ teaspoon pepper
- 2 teaspoons minced garlic (mom used the garlic in a jar)
- 1 cup Progresso Italian flavored crumbs (I never buy any other brand)
- 1 egg
- 1 teaspoon salt
- ¾ to 1 cup Romano cheese (you can use Parmesan)
Mix all ingredients with your hands until well blended. Meatballs can be made any size. We place the meatballs raw in a pot of sauce on Sunday mornings. Make the meatballs smaller than a golf ball if you are going to cook them like this. Cooking the meatballs in the sauce makes them very moist.
