Gee-Gee Potato Salad

History: If I haven't said it, my children's great grandmother was one of the best Southern cooks around. She group up in the high plains of west Texas on land that had cotton. She learned to cook with her mother and sisters as they had to prepare large meals for all the farm hands 3 times a day.  It was the days of wood stoves where when one meal was done the next was started. The burned tons of calories working the land so there was no thought for calorie reduction  . . . . it was all about the taste and this is one of those great recipes that I learned from her.  I hope your family enjoys it as much as mine does.

 

My Copy Cat Gee-Gee Potato Salad



  • 1 lb of boiled cooled potatoes. (I peel mine, but it is optional)
  • 2 cooled hard boiled eggs chopped
  • 1 chopped dill pickle
  • 4 tablespoons sweet pickle relish
  • 1 tablespoon of fresh parsley chopped fine
  • 1/4 - 1/2 cup mayo (we love miracle whip and use it instead of mayo)
  • 1 tablespoon mustard
  • Salt & pepper to taste
  • paprika to sprinkle on top


Place all the ingredients in a large bowl. Mix well. If you like smooth potato salad mash with potato masher. If you like chunky, chop your potatoes and mix up.
After mixed sprinkle paprika over top and place a small sprig of parsley on top.
