Vegie Chicken Salad
Ingredients:
- 4 lbs soy protein concentrate cubed (Worthington meatless chicken style)
- 1 medium stalk celery, chopped thinly
- 1 medium red onion diced
- 1 1/2 cup walnuts, coarsely chopped
- 1 qt Kraft real mayo or Hellmann's mayo
- 32 oz low fat cottage cheese (small curd)
- 2 tbsp garlic powder (you can use real garlic)
- Mix all ingredients above.
- Chill 4 hours or overnight.
- Serve with crackers or whole grain bread.
