Vegie Chicken Salad

Vegie Chicken Salad

Ingredients:
  • 4 lbs soy protein concentrate cubed (Worthington meatless chicken style)
  • 1 medium stalk celery, chopped thinly
  • 1 medium red onion diced
  • 1 1/2 cup walnuts, coarsely chopped
  • 1 qt Kraft real mayo or Hellmann's mayo
  • 32 oz low fat cottage cheese (small curd)
  • 2 tbsp garlic powder (you can use real garlic)
Directions:
  1. Mix all ingredients above.
  2. Chill 4 hours or overnight.
  3. Serve with crackers or whole grain bread.
If you have leftovers it freezes well.
