Ms. Young's Sweet Potato Pie

Ms. Young and I met on a plane trip last year. She and I got to talking about food and family. She shared this traditional southern recipe. I had eaten it, but never made it.

Ingredients:
- 4 med sweet potatoes peeled and cut into medium sized chunks
- 1 teaspoon salt
- 1 can eagle brand milk
- 1 cup of sugar add more or less to your liking
- 1 stick of butter
- 2 eggs
- 1 tablespoon cinnamon
- 1 tablespoon nutmeg
- 1 tablespoon vanilla
- Boil sweet potatoes with salt until soft when pierced with fork
- Use potato masher or mixer to cream potatoes.
- Add eggs, sugar, butter, condensed milk, cinnamon, nutmeg, and vanilla.
- Pour into pie crusts.
- Bake at 350 until crust is golden brown
- Yields 3-4 pies
