Ms. Young's Sweet Potato Pie

Ms. Young's Sweet Potato Pie
History:
Ms. Young and I met on a plane trip last year. She and I got to talking about food and family. She shared this traditional southern recipe. I had eaten it, but never made it.
Thank you Ms. Young.

Ingredients:

  • 4 med sweet potatoes peeled and cut into medium sized chunks
  • 1 teaspoon salt
  • 1 can eagle brand milk
  • 1 cup of sugar add more or less to your liking
  • 1 stick of butter
  • 2 eggs
  • 1 tablespoon cinnamon
  • 1 tablespoon nutmeg
  • 1 tablespoon vanilla
Directions:
  1. Boil sweet potatoes with salt until soft when pierced with fork
  2. Use potato masher or mixer to cream potatoes.
  3. Add eggs, sugar, butter, condensed milk, cinnamon, nutmeg, and vanilla.
  4. Pour into pie crusts.
  5. Bake at 350 until crust is golden brown
  6. Yields 3-4 pies
