Tasty Low Cal Spinach

Tasty Low Cal Spinach
History: I have started Weight Watchers and have been trying to create recipes that fit the point system which I use for keeping up with what I eat. This is a recipe that my Sweetie even loves.

Ingredients:
  • 16 oz frozen spinach
  • 1/4 bell pepper
  • 4 or 5 fresh sliced mushrooms
  • 1 oz romano cheese grated
  • 1 teaspoon olive oil
Directions:
  1. I thaw spinach first because it cooks faster.
  2. Fry peppers and mushrooms at medium heat in olive oil.
  3. Add thawed spinach (squeeze out water first)
  4. Cook until spinach is hot about 10 minutes.
  5. Add grated Romano.
  6. Stir cheese in until melted.
  7. Serve hot.
1/2 cup per serving = 1 point
