Meatball Soup

Meatball Soup
 
History: Meatball soup is a comfort food for me. Every Italian relative had their own little tweak to this recipe. My recipe is my Nonna's. When I was 19 I had a few days with her in the winter. I watched her make this soup. I had never watched my mother make this or my Aunti Anna, but I kept a keen eye out after that to see the secrets of meatball soup from various Italian women in our family.
This is to your legacy Nonna.

Ingredients for Meatballs:
  • 1 pound hamburger
  • 1 egg
  • 1/2 cup Italian bread crumbs
  • 1 clove garlic
  • 2 teaspoons parsley (fresh is better)
  • 1/2 cup Romano cheese
Directions for meatballs:
Mix all ingredients above well. Roll small meatballs in the palm of your hand. Not normal size, but smaller bite size. Set to the side and prepare soup

Ingredients for Soup:
  • 2 raw chicken breasts
  • 1 15 oz can vegetable or chicken broth
  • 1 onion chopped
  • 1 cup diced carrots
  • 1 cup diced celery
  • 6 cups water
  • 1/2 pound orzo or some small pasta
Directions:
In a crock pot or a pot place all ingredients. I cook on low 10 hours in the crock pot. It using a pot, cook 1 hour on medium heat. Cook 1/2 pound orzo pasta in a separate pot, and add to the pot or crock pot. Shred chicken breasts with a fork into thin slivers.
Serve warm with Romano cheese sprinkled on top.
