History: On a visit to Costa Rica I discovered Gallo Pinto. I really enjoyed this simple dish that is a staple in Costa Rica.
Gallo Pinto
Ingredients:
- 1/2 cup celery fiber or thinly sliced celery
- 1/2 cup carrot fiber or minced carrots
- 2 cups cooked rice (cook in chicken broth or vegie chicken broth)
- 3 cups cooked beans (I cook the beans in vegie chicken broth, but you can use canned beans)
- 1 chopped small onion
- 1/2 small chopped red pepper
- 3 cloves of garlic minced
- 1 tbs oil
- 1/4 - 1 cup chopped cilantro
- pinch of black pepper to taste
How to prepare:
- Fry onion, red pepper, garlic, celery, carrot, and cilantro in vegetable oil, about 3 -5 minutes.
- Pour beans into the mixture. Let it cook for a few minutes, and don't let it dry out.
- Pour in the cooked rice and fry up. You can add a little water if it is to dry Stir it all up and serve with sour cream.
