Gallo Pinto

History:  On a visit to Costa Rica I discovered Gallo Pinto.  I really enjoyed this simple dish that is a staple in Costa Rica.


Gallo Pinto
Ingredients:
  • 1/2 cup celery fiber or thinly sliced celery
  • 1/2 cup carrot fiber or minced carrots
  • 2 cups cooked rice (cook in chicken broth or vegie chicken broth)
  • 3 cups cooked beans (I cook the beans in vegie chicken broth, but you can use canned beans)
  • 1 chopped small onion
  • 1/2 small chopped red pepper
  • 3 cloves of garlic minced
  • 1 tbs oil
  • 1/4 - 1 cup chopped cilantro
  • pinch of black pepper to taste


How to prepare:
  1. Fry onion, red pepper, garlic, celery, carrot, and cilantro in vegetable oil, about 3 -5 minutes.
  2. Pour beans into the mixture. Let it cook for a few minutes, and don't let it dry out.
  3. Pour in the cooked rice and fry up. You can add a little water if it is to dry Stir it all up and serve with sour cream.
