Date Balls

Date Balls

History: This is my favorite Christmas recipe. I found this hand written in my mother’s St. Joseph Cookbook. My mother made these every year at Christmas.



Ingredients:

· 1 ½ cup dates

· 1 cube butter

· 1 cup white sugar

· 2 eggs slightly beaten

· 1 cup chopped nuts

· 2 cups rice crispies



Directions:

1. Cook dates, butter, and sugar. Let cool and add slightly beaten eggs. Cook 7 more mins or until it thickens.

2. Add nuts and rice crispies.

3. This may be very sticky so it is helpful to let it get cool overnight in the refrigerator.

4. Roll in coconut.

Freezes well.
