Aunt Rene's Fancy Sweet Potatoes
History:
Original Norma McGuyer out of the Disciple Delights, First Christian Church Cook book. We eat this every Thanksgiving.
Ingredients:
- 3 cups sweet potatoes cooked and mashed
- 1 cup white sugar
- 2 eggs beaten
- 1/2 cup butter or margarine
- 2 tablespoons flour
- Mix all together
Topping
- 1 cup brown sugar
- 1/3 cup soft butter margarine
- 1 cup chopped pecans
- 1/3 cup flour
- Mix and sprinkle all the ingredients above on top of potato mixture
- Cook in 1/2 quart pan 30-35 minutes
- Bake at 350 degrees
Note: If you double this recipe use a 9 x 13 baking dish. The topping does not need to be doubled. The topping ratio is 1 1/2 for the double batch.
