Aunt Rene's Fancy Sweet Potatoes
History:
Original Norma McGuyer out of the Disciple Delights, First Christian Church Cook book. We eat this every Thanksgiving.

Ingredients:
  • 3 cups sweet potatoes cooked and mashed
  • 1 cup white sugar
  • 2 eggs beaten
  • 1/2 cup butter or margarine
  • 2 tablespoons flour
  1. Mix all together

Topping
  • 1 cup brown sugar
  • 1/3 cup soft butter margarine
  • 1 cup chopped pecans
  • 1/3 cup flour

  1. Mix and sprinkle all the ingredients above on top of potato mixture
  2. Cook in 1/2 quart pan 30-35 minutes
  3. Bake at 350 degrees
Note: If you double this recipe use a 9 x 13 baking dish. The topping does not need to be doubled. The topping ratio is 1 1/2 for the double batch.
